Sticky pink grapefruit chicken thighs!
So after my hair came out awesome I still had to make dinner. I spent a large part of yesterday making assorted Pink Grapefruit Marmalades click here for basic recipe. I made several batches with add ins– fresh tarragon, thai chili’s, ginger and also a few of the basic recipe–all excellent and easy to make). Tonight I seasoned some boneless skinless chicken thighs with chinese 5 spice powder and cooked them in just a bit of canola oil until crispy in a saute pan. I added some of the delicious ginger pink grapefruit marmalade and some soy sauce and rice wine vinegar along with a pinch of garlic powder and sesame oil. It cooked down to a delicious sticky sauce which I finished with a splash of bourbon. SO YUMMY! I served it with sticky rice and garnished it with scallions and cilantro. So good it made the hours of sweating over a hot pressure canner yesterday so worth it!!!
