I’ve never met anyone that doesn’t love pizza. It’s universally loved across cultures, age and gender. My husband and I REALLY love pizza! So much so that he built us a pizza oven and we used it almost every weekend! We’ve since moved to South Carolina and have yet to find a good pie there–it’s mostly chain restaurants which have their place but can’t compare to a “real” pizza! So when we come back to CT for work or to visit, eating great pizza is at the top of our “to do” list! The best pizza we’ve ever had has been at Frank Pepe’s Pizzeria Napoletana. Referred to as “Pepe’s” it’s been written up in countless books and magazines as well as featured on many food and travel shows. And for good reason–it’s pizza perfection. Founded by Frank Pepe in 1925 the original location is at 163 Wooster Street in New Haven, CT. There are currently 6 locations in CT and on in NY. tomato sauce, fresh mozzarella and basil leaves. Without other distracting toppings you can really taste the sauce and crust which is the basis for any great pizza. Pepe’s doesn’t disappoint–the crust is thin and has the perfect balance of crustiness and chewiness with a subtle char from the coal fired brick oven. The sauce is intensely tomato flavored with a mellow sweetness and just the right amount of seasoning. It’s awesome! But the most famous pie at Pepe’s is their signature white clam. Topped with freshly shucked clams, garlic, oregano, olive oil and a sprinkle of parmesan cheese it’s so good that it will bring a tear to your eye. Just the right amount of chewy, briny, garlicky, herbaceous deliciousness! Without the sauce to weigh it down the crust remains crunchy all the way to the middle, though still pliable enough to fold in half to hold all of those yummy clams inside! Pepe’s is so fanatical about only having freshly shucked clams that they employ people just for the purpose of shucking them and if fresh clams aren’t available they won’t serve the pizza! Now that is a commitment to quality! As a result this pie is one of my top “last meal” choices. If you love pizza and have never been to Pepe’s–find a way to make the trip! It will be a pizza you never forget with the only downside being that it will spoil you for all other pizza forever! But trust me, it’s worth it!
