So I know that it’s Monday, which usually means a meatball recipe, but today we’re doing something a little bit different (though they are still round so does that count???)
In honor of World Diabetes Day on Thursday, November 14th, I’m participating in a project by A Sweet Life Magazine. Each day this week, myself and a few of my fellow low carb bloggers are providing a course for a World Diabetes Day dinner menu. I drew the appetizer course, so I’m first up with today’s recipe for these low carb Cheesy Spinach Puffs.
When I was contacted about participating in this project, I was both honored and very happy to oblige since I have several family members who have been diagnosed with diabetes in recent years. It has changed the way I cook for them, and how I look at sugar and refined carbohydrates overall. In fact, though I do not have diabetes myself, it was a major contributor to my going low carb a couple of years ago.
Appetizers for me are sometimes challenging on low carb – so many of the most delicious ones are made with carbohydrates like bread, potatoes, or rice as their foundation! I wanted my recipe to fit the low carb and gluten free criteria, but also to have that mouthwatering wow factor that a good appetizer has.

This recipe omits the carbs, but hits all of the right notes – they are crisp on the outside, and melty/gooey on the inside, with a fantastic balance of flavor between the earthy spinach and salty cheese. It’s the perfect recipe for entertaining, though you may not WANT to share once you try them!

The bad news is that they are pretty addicting so it’s easy to eat 10 of them – the good news is that spinach is very healthy for you, and these come in at just under 1g net carbs each so you can indulge guilt free!
Did I mention that these Cheesy Spinach Puffs are ridiculously easy to make? You could be eating them in less than 30 minutes.
