I know you’re probably sick to death of poultry right now, but I promise that these low carb meatballs in no way resemble anything related to a traditional turkey dinner!
Tender and flavorful, the ground chicken (or turkey) is seasoned with ginger, chilis, and garam masala (among other things.)Â Then the meatballs are baked and slathered in this highly addicting low carb satay sauce.
A little spicy and a lot delicious, these silky meatballs are both comforting and exciting to eat. If you enjoy Thai flavors you are going to love this recipe!
I ate these cold out of the fridge the next day and they were STILL fantastic! That’s when you know a recipe is good people!!! BTW am I the only one who eats random things cold out of the fridge for breakfast the next day? Inquiring minds want to know (ie. how crazy am I on a scale of 1 to 10?)
The satay sauce can be made with either peanut butter or almond butter depending on your dietary/allergy requirements. I’ve tried it both ways and it’s equally scrumptious with either.

You can also use this sauce as a fun twist on salad dressing, or for these braided chicken skewers which can be baked or grilled according to your preference!
These low carb and gluten free meatballs are perfect for a party appetizer, snack, or even as a main dish. To make them into a complete meal try serving them alongside some tandoori cauliflower and spicy sriracha roasted broccoli!

I love your sauces, especially Asian-inspired ones. Can this Satay sauce and the similar sauce you use for the Chicken Sheet Pan dinner be prepared ahead and frozen? I would like to make/freeze both to have on hand. (lazy me) Thanks.
Mellissa Sevigny says
I’m not sure if they would separate after being frozen – they might be ok you’d probably have to blend them smooth after thawing though.

Thanks for reminding me how much I love satay, and as you say the sauce can be eaten with just about anything, so I always hope to make a little more than I really need. Lovely recipes, and your photos really show beautifully. Thanks for bringing them to the party! http://tasteusa.blogspot.com

In cooking for the week last night, This is one of the recipes I made. The meatballs by themselves are delicious. The sauce has good flavor but I think next time I will eliminate the xantham gum. It gave the sauce a bit of a slimy texture.
Mellissa Sevigny says
Thanks for letting me know Elissa! The xanthan can have a weird texture and it’s perfectly fine to leave it out!

These are our meatball Monday dinner next week!!! These sound amazing!!
Mellissa Sevigny says
Hope these are a hit Kate! Let me know how they go over with the family!!!

I’m wondering if it would be possible to keep the meatballs and sauce warm in a crock pot. I need something to take to a work potluck and am thinking this would be great. What do you think?
Mellissa Sevigny says
I don’t see why not! Possibly use a little less xanthan gum (or none at all) in the sauce so that it doesn’t get too thick while sitting, otherwise this would be a perfect recipe to keep warm in the crockpot! Hope they are a hit at your potluck!

Thanks!

Cold “leftovers” retrieved from the fridge are OFTEN go-to brekkies or quick lunch fare for me!..No…YOU ARE NOT ALONE!! Hee…
This looks positively scrumptious…and a warming, “saucy” affair that begs to be concocted! I have some garam masala just waiting for this treatment. HOW do you manage to be so consistently creative in the culinary department with the mad rush of the holidays upon us?! I am so impressed and extremely grateful for your answers to my perpetual self-question of “What Do I Make For Dinner?!” quandaries. Thank you!
Mellissa Sevigny says
Thanks for validating my crazy cold breakfast habit Donna! ha ha! Happy to help you figure out what to make for dinner! So far the meatball ideas just keep coming, but I wonder if one day I’ll get meatball block. Time will tell! ;)
