Just made the Nacho Cheese Dip for the first time from the Winter Recipes and I had to stop myself from getting a spoon. Luckily, I used a Jalapeno Cilantro Salsa so the heat kept me gobbling it all in one sitting. What an easy, fantastic, fresh tasting recipe. My dippers were crisp yellow pepper strips. Awesome for entertaining or while waiting for dinner in the oven. As it happens, my dinner in the oven in your Chicken Paprika w/ Sour Cream Gravy. I’ve never liked and rarely eaten, chicken thighs but you made them sound so good, had to try the recipe as written and it’s looking pretty tasty in my oven.
Is this a diet? No way. Thanks for so good and so easy recipes.

I just receive your Winter recipes and I think this is your best one yet. There are quite a few recipes in here I’d like to try. I’m especially excited to try your peppermint meringues. I’ve tried meringues using erythritol several times now with poor results. I’m hoping that adding the xanthan gum makes mine come out looking like yours. Thanks!

Thanks for purchasing the ezines and for the feedback! I loved the meringues – so light and crispy! I know the xanthan gum helps, but also for these I used a splenda knockoff that Mr. Hungry uses in his coffee because it contains maltodextrin which can help stabilize them as well. I think with the xanthan you won’t need it, but if the erythritol still doesn’t work you might want to consider a granulated blend with maltodextrin in it. Let me know how they come out! Another one of our favorites from this issue is the creamy feta and dill dip with kalamata olives – it’s SO good no matter what you put it on, and makes a delicious stuffing for skin on chicken breast too!
