If you’re a fan of Meatball Mondays (and who isn’t?) then you might have been confused when you saw this title, because a) it’s not Monday, and b) it’s been quite awhile since I posted a new low carb and gluten free meatball recipe!
Well you guys have Carolyn over at All Day I Dream About Food to thank for this one. I’ve been meaning to get back in the meatball groove for awhile now, but with posting the Weekly Keto Menu Plans, and the Spring issue of the Quarterly IBIH Ezine still unfinished, I just haven’t had the time or motivation.
When Carolyn contacted me about doing a guest post for her while she was on vacation in Florida (super jealous btw!), I was freaking out that she might ask me for a dessert recipe – we all know she is the undisputed (in my book anyway) QUEEN of low carb and gluten free dessert recipes! So when she suggested I do a meatball recipe I was a) relieved, and b) excited to dust off my list of meatball concepts that had not yet been realized. Thus, this low carb and gluten free Kung Pao Meatball recipe was born!
Now I know some of you are thinking “It’s SO annoying when bloggers post about a recipe, and then make me go over to another blog to get it.” Here are some compelling reasons why you shouldn’t sulk about it:
- Let’s keep in perspective the amount of effort required – IT’S ONE CLICK. A tap, a twitch, even a swipe or quiver will get you there. Seriously, you could have been over there already if you weren’t wasting time reading this sentence.
- You should be thanking me for any excuse to head over to Carolyn’s page – especially if you aren’t familiar with her amazing blog already. I’m over there ALL. THE. TIME. drooling over her unbelievable low carb creations. You’re welcome.
- Out of the 30+ meatball recipes I’ve posted here on IBIH, this Kung Pao Meatball Recipe is one of the best I’ve ever created – it’s well worth the time and effort of that single click (seriously, why are you STILL HERE?) to get to it.
