    Word to the wise…don’t wait six months to make this coconut cake and then try to rely on memory to make it!! Sadly, I just poured about 2 cups of the coconut flour into a bowl, that I finally found at Winco in bulk. Yeah…kept expanding and expanding…took more and more liquid, and finally I just cooked it up and put a coconut/cream cheese FROSTING on it with more coconut and s.f. dark chocolate almonds that I’d ground up in the food processor. The frosting was pretty good, but the cake- well, let’s just say it’s filling…

    Looked up the recipe and laughed out loud. Two TABLESPOONS?! Well, that explains a lot. ;) Trying again after I toss this glop monster.

    I think something is wrong with my internet! I can’t see any of your titles. Like the webpage title, the tabs where you have about, contact and recipe index. Or titles of the recipes on the home page or here on the recipe index page! I love your site and I came to search through some recipes, but I can’t see anything so I can find what I am looking for! I also cannot click “see all” under the categories on the recipe index page. Any ideas why this is happening? Thanks!

      Hi Brooke,
      Are you viewing it in Internet Explorer? If so, there is some kind of bug in how the site shows up that I’m still working on. Try viewing it in Chrome or Firefox and see if that makes a difference! Thanks for letting me know!

        Oh that worked! I went to Chrome and now all the titles are back! How strange! I used to view it through internet explorer and it worked just fine! No worries though! I am just glad to be back to searching for some yummy recopies! Thank you!

    I can’t seem to get them to load on any browser (Chrome, Firefox, IE, Safari). I’m guessing I’m not the only one so I’d look into it when you can.

    Melissa, I just bought 3 of your e-zines. Thank you!! The first recipe I saw was a yummy sounding soup recipe (Cheddar and Roasted Red Pepper Soup) and I saw you use cream cheese in it. I have come to the conclusion that I do not care for cream cheese in anything but dessert or dips/spreads. Is there a substitute I could use for cream cheese in soups or main dishes? I see they usually have cream already, but I am still so new to this low carb woe, that I am a little lost. Thank you again.

      I’d recommend trying it with the cream cheese frankly – you can’t taste it and it adds an amazing thick texture. If you can handle cream cheese in dips then I think this will work for you. Otherwise, you can replace it with more cream and cheddar instead but it won’t have the same richness by a long shot. Either way I hope you like it!

    New to gluten free (but have been doing semi-low carb around 75-150 grams this whole pregnancy – 22 weeks now.) I made your giant meatballs and froze them up a few weeks ago, and we’re having them for dinner tonight! I know they are amazing because I sampled one the moment it came out of the oven. :) Anyway, I’m hoping to cook a bunch of things to freeze before this second child comes along. Do you have any favorite recipes that freeze well (cooked or uncooked?) Can’t wait to try some more of your recipes soon!

      That’s really strange, I’ll have to have my developer look into it. There might be some kind of block on your own browsers that unlocks when you comment – but if it’s on my end we’ll try to get it fixed!

    Hi! Did you ever post a “how-to” on making the little bacon ice cream cones for the chocolate ice cream cake you made in 2013? It’s not linked in the recipe, and I’m not having any luck searching.

      Now that you mention it, I never did post that! I wrapped the bacon around little metal cones that were meant for pastry horns and secured them with toothpicks, then baked them in the oven til crisp. Then I dipped the edges in dark chocolate! I’ll have to get to work on that tutorial soon – in the meantime hopefully you can wing it! :) Thanks for the reminder!

    There is a picture at the top of the recipe index that sort of looks like cornbread. There is no label on it and I didn’t see it in any of the other recipes. What is it? It looks yummy! and like something I would like to try — love your recipes. Thanks for this site.

    I LOVE your recipes, hate your website. More often than not it doesn’t work and I go away frustrated. I try on a couple of different computers, different browsers and most of the time all I see is turning circles and the recipe pictures never load. :(

    I love your approach to low carb. I’m just starting out and really appreciate the recipes and other help. However… The ads on your site are out of control. I think that’s why people are having so many problems. For me it takes forever for the good content to load due to the ads flashing all over the place. :( I understand you need the ads for income, but I’m just providing a little feedback. Regardless, thanks for all your efforts!

    I don’t know if it’s all the ads you have on your site but nothing loads. I think once I’ve managed to go through your recipes and I’d really love to try them, but all I get are spinning circles on each picture. As previous posters above I’m leaving this comment to see if that works.
