About a month ago Jones Dairy Farm asked me to help them come up with some “Brinner” (that’s breakfast for dinner) recipes featuring their delicious products. If you’ve been hanging around IBIH for awhile, you know that I’ve worked with Jones Dairy Farm a lot over the last couple of years, and that I highly recommend their certified gluten free bacon, sausage, and ham products!
For this month’s Brinner concept, I came up with this delicious low carb breakfast chili using the Jones Dairy Farm cooked sausage patties. Because the patties are already cooked, it is incredibly easy and fast to throw this chili together!
I wondered when I was testing this recipe how the sausage would taste when combined with my typical chili spices, hoping that it would work out. Boy did it! I LOVED the flavor of the sausage – it definitely gave it the flavor of breakfast, but with a hearty dinner feel.
I garnished my chili with the usual suspects – but then I added a runny fried egg to get an authentic breakfasty vibe and it was SO AWESOME. You know I’ll put a fried egg on almost anything and call it a day, but this was even better then I could have imagined! Seriously – YOU HAVE TO TRY IT!
As an alternative to serving this low carb breakfast chili in a bowl, you could use it in a low carb tortilla to make burritos, tacos, or if you aren’t low carbing it, put it on some tortilla chips and make breakfast nachos!
So. Many. Possibilities.
