You may remember that I created these delicous Cheesy Spinach Puffs for A Sweet Life Magazine last year for their diabetes awareness campaign. This year they asked me to participate again, and I was happy to do it since A Sweet Life is a great resource for those living with Diabetes, or who have Diabetic family members.
This year I wanted to create something light and refreshing to offset some of the heavier comfort foods that we’re all eating now. I love Mediterranean flavors, so a hearty salad featuring cauliflower, mint, parsley, and lemon (among other things) was right up my alley.
This Cauliflower Tabbouleh Salad is the perfect accompaniment to grilled and roasted meats, and you can also make my low carb faux-lafel and low carb no bean hummus with it for a festive Mediterranean-themed feast!
