When I started my own blog in the summer of 2011, I knew next to nothing about blogging. One of the ways I learned what to do (and more importantly, not to do) is by following other bloggers that I respected. One of the very first blogs I ever followed was The Healthy Foodie. I was instantly drawn to Sonia’s beautiful food styling and photography, as well as her enthusiasm for food and unusual ingredients (she’s the one who introduced me to the possibilities of coconut flour!)
I had no idea that her blog was only a few months older than my own at the time – she was such a professional and made it look so easy!
While Sonia and I hold a lot of the same food values now that she’s gone Paleo, it wasn’t always so! Back when she was low fat and a borderline vegetarian, I used to tease her all the time in the comments that her recipes looked amazing, but could be so much better with the addition of bacon! I’d always crack myself up knowing she’d be horrified, because bacon was just SO UNHEALTHY! Now she puts me to shame and even renders her own lard!
Sonia’s blog isn’t just loaded with amazing and beautiful recipes though – her body transformation story is incredibly inspiring! If nothing else, you guys HAVE to check out her about page and see the before and after photos. If that doesn’t inspire you to change your eating habits and get off the couch, I don’t know what will! It is nothing short of amazing! SHE is amazing, and if you check out her blog I’m sure you’ll become her stalker for life like I am!
Needless to say, when Sonia asked me to guest post for her while she was on vacation, I knew whatever I made would have bacon in it. I decided to go with this quintessentially Fall flavored stuffed squash that is super simple to make, but so delicious!
