I should say up front that this recipe is not for my very low carb peeps. It’s about 30g net carbs per sandwich, so if you can maintain at between 50-100 net carbs per day then you may be able to splurge on one of these (and it will be totally worth it!) Otherwise, this recipe is more for those who are looking for an easy gluten free (and nut free) dessert option.
When Udi’s asked me to come up with a gluten free recipe for them, I knew I wanted it to be something easy. There are lots of recipes here on IBIH and on other gluten free sites for baked goods and desserts that taste amazing. Sometimes though, you want something quick and simple – especially in the Summer.
I don’t know about you, but baking anything in my oven when it’s 90+ degrees and humid outside is not my idea of a good time! That’s where Udi’s comes in. Even in my rural Southern town, our local grocery store is carrying Udi’s muffins, cookies, and breads in the freezer section now! So when I’m in need of something gluten free and don’t feel like baking, I’m covered – and so are you!
I originally purchased these Udi’s brownie bites with the intention of creating an easy trifle or sundae. When I thawed a couple out and tasted them though, I was impressed by how fudgy and chewy they were. I can’t pinpoint the exact second that the idea struck or why, but next thing I knew I was smashing them into my counter to create a thin disc suitable for an ice cream sandwich.
Mentally I got a kick out of the Udi’s people reading this and looking on in horror as I smash their beautiful brownie bites into a flat as a pancake circle! (Look away Udi’s, LOOK. AWAY.)
You may need to work it a little with the heel of your hand to get it really flat – or you can try using a sturdy glass, or even a rolling pin. If you don’t have a slab of marble, or a granite countertop to press them into, just use a piece of parchment or wax paper underneath it – then you can peel it right off. As it was, I used a thin metal spatula to pry mine off of the marble and it worked fine. I stacked them up with the original wrappers in between them, and froze them for about 30 minutes before assembling the sandwiches.
Once the discs were firm again, I mixed the ice cream and assembled the sandwiches. Then I refroze them for an hour. If you try to eat them right away, most of the ice cream will just squeeze out of the sides.
These are best eaten within 5 minutes after removing from the freezer. You want to wait a minute or so after taking them out so they aren’t rock hard. But then you’ve got 3 – 5 minutes before they start getting TOO soft and you’re back to the ice cream squeezing out of the sides again, like they did when I tried to eat one after this photo shoot. I doubt they’ll last that long anyway – this is about a 5 bite sandwich, and it’s gone way too soon!
Once you flatten out your discs, you can refreeze them in the original package for a couple of weeks. That way if you want to experiment with other ice cream flavors and combos, you’ll always have some sandwich layers ready to go! Or you can assemble them with your favorite flavor of ice cream and store them in an airtight container for up to a week. Not that they’ll last that long – trust me on this.Print
An easy to assemble gluten free ice cream sandwich recipe – perfect for lazy summer days by the pool!
- 10 Udi’s Brownie Bites, thawed
- 2 cups sugar free vanilla ice cream, softened
- 1 tsp black cherry extract
- 1/3 cup fresh cherries, pitted and chopped
- Remove the wrapper from the brownies and set aside. Press each brownie onto parchment or a smooth surface with the heel of your hand, a sturdy glass, or a rolling pin until it’s flattened into a 3-4 inch circle. Stack the brownie discs with the flattened wrappers between them, and refreeze for at least 30 minutes or until hardened.
- Meanwhile, put your two cups of ice cream into a bowl and mix in the cherry extract and chopped cherries until combined. Place about 1/3 cup of the ice cream mixture onto a brownie disc, then top with another and press down until the ice cream reaches the edges. Freeze for at least one hour, or until firm before serving.
Approx nutrition info per sandwich: 273 calories, 17g fat, 30g net carbs, 4g protein
