This easy keto roasted chicken recipe is super simple to make, but tastes like you slaved all day!

Ingredients

  • 4 large skin-on chicken thighs
  • 4 large Roma tomatoes
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme leaves
  • salt and pepper to taste

Instructions

  1. Place chicken thighs in a baking dish. Wash the Roma tomatoes and cut them in half. Place on the same baking dish as the chicken, cut side up. Season the chicken and tomatoes with salt and pepper. Drizzle the olive oil over the top. Sprinkle with fresh thyme. Roast at 375 degrees (F) for one hour. Serve.
