Keto Meringue with Berries – Low Carb

Keto meringue with berries is perfect low carb and low calorie dessert for summer – beautiful, easy, and delicious! Also naturally gluten free.


Units Scale
  • 1 cup strawberries
  • 1 cup raspberries
  • 1 cup blueberries
  • 2 tablespoons granulated sugar substitute (or honey if Paleo)

For the meringue:

  • 5 egg whites
  • 2 tablespoons granulated sugar substitute
  • 1/2 teaspoon xanthan gum (optional)
  • 2 teaspoons white vinegar


  1. Wash and slice the berries.
  2. In a medium bowl, combine the berries and sweetener, gently tossing to coat.
  3. Spoon the berries into one large, or 6 small baking dishes.

For the meringue:

  1. Combine the egg whites, sweetener, and xanthan gum in a large bowl.
  2. Whip until stiff peaks form.
  3. Add the vinegar and whip until just combined.
  4. Spoon the meringue over the berries.
  5. Bake in a preheated 300 degree (F) oven for about 40 minutes for one large, and 25 minutes for 6 small meringues.
  6. Remove and serve immediately for a crisp exterior.
