Ingredients

  • 3 cups chopped rotisserie chicken breast
  • 1/2 cup mayonnaise (I used Hellmann’s)
  • 1 teaspoon coarse kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon freshly grated lemon zest (from 1 large lemon)
  • 2 tablespoons freshly squeezed lemon juice (from the same lemon)
  • 1/4 cup thinly sliced fresh basil

Instructions

  1. Add the chopped chicken to a medium bowl.

  2. Stir in the mayonnaise, salt, pepper, lemon zest, lemon juice, and sliced basil until well combined.

  3. Serve chilled.

  4. Store in an airtight container in the refrigerator for up to 5 days. Do not freeze.
