Description
A delicious creamy lemon poppy seed salad dressing that is gluten free and high in protein.
Ingredients

- 1/2 cup lowfat cottage cheese (I used Good Culture)
- 1/3 cup 1% milk
- 3 tablespoons honey (or a carb free sweetener of your choice)
- 2 teaspoons grated lemon zest
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup avocado oil
- 1/2 teaspoon coarse kosher salt
- 1 tablespoon poppy seeds
Instructions
- Combine the ingredients (except for the poppy seeds) in a blender or magic bullet and blend until smooth.
- Add the poppy seeds and blend for just 5 seconds to distribute.
- Store in an airtight container in the refrigerator for up to 5 days. Do not freeze.
