Sriracha Roasted Broccoli – Keto, Low Carb

Description

A mildly spicy sriracha roasted broccoli with hints of soy and lime.


Ingredients

  • 4 heaping cups chopped broccoli
  • 1/4 cup mayonnaise
  • 1 tablespoon Sriracha hot sauce
  • 1 teaspoon soy sauce, Tamari, or fish sauce
  • 1/2 teaspoon lime juice

Instructions

  1. Cook the rinsed broccoli uncovered in an oven safe dish in the microwave (on high) for 5 minutes. Alternatively you could steam or blanch it until bright green and still slightly firm.
  2. Meanwhile, combine the mayonnaise, sriracha, soy sauce and lime juice in a large bowl and stir well.
  3. Add the microwaved broccoli into the bowl, and stir well to coat the pieces in the sauce.
  4. Transfer the broccoli to a baking dish and place in the oven.
  5. Set the oven to broil on High and leave the broccoli in for 3-4 minutes, or until starting to brown and the sauce turns translucent.
  6. Remove from the oven and stir, then put back in the oven and broil for another 4 minutes or until lightly browned across the top.
  7. Remove from the oven and serve warm.
