If you’ve been hanging out with me here on IBIH for awhile, you know that while I enjoy occasional sweet treats, I’m not a fan of complicated low carb dessert recipes. Unless someone else is making them for me – in which case BRING THEM ON.
My niche is more the quick and easy low carb dessert recipe, like the No Cook Peanut Butter and Chocolate Truffles that I posted a few months ago. Along the same lines, today I’m bringing you these Low Carb Pecan Turtle Truffles!
This recipe comes together quickly so you can go from “Hmmm… I could go for something sweet” to “Holy Moly these are good – let’s EAT THEM ALL!” in about 5 minutes – maybe less if you’re really motivated.
Like the peanut butter truffle recipe, I used my favorite zero carb vanilla protein powder to give these Low Carb Pecan Turtle Truffles body and substance. The ground pecans also give them a pleasantly chewy texture.
The flavor really is like that of a classic pecan turtle – lots of caramel, dark chocolate, and the subtly sweet nuttiness of the pecans.
As always, using quality ingredients is going to make all of the difference – especially with the pecans.
Have you ever eaten a rancid pecan? It’s disgusting and will make you wish you were dead. I’m totally not kidding. If you’ve ever bitten into one you know what I mean.
So while you don’t need to pay extra for organic pecans harvested from trees watered lovingly by the tender hands of 1000 virgins, you should absolutely use the freshest pecans you can get.
Then you should store your extra pecans in the freezer as they will keep longer for next time you want to make a batch of these. (about 20 minutes after you make and devour the first batch if you’re like me.)
I’m going to tell you (because some adorably naive person is bound to ask) that these will last a week or more in the fridge, and can be frozen for months – but we both know they won’t be in there that long. Unless you hide them from the rest of the family. Which I highly recommend if you plan on trying to make them last.

If you’re on low carb or keto and are into fat bombs – these Low Carb Pecan Turtle Truffles totally qualify. So if thinking of them as fat bombs instead of candy or treats makes you feel better about it – you can call them whatever you want! I just call them AWESOME.
Also gone. LONG. GONE.
Note: I used store bought pecan meal in this Low Carb Pecan Turtle Truffles recipe, which made it even easier, but you can also just throw some (fresh) pecans or pieces into a food processor or magic bullet and pulse for a few seconds until you get a coursely ground meal texture.
- ½ cup butter, melted
- ⅓ cup granulated sugar substitute (I used Swerve)
- ½ tsp caramel extract
- ¼ tsp vanilla extract
- ⅓ cup zero carb vanilla protein powder
- 1 cup finely ground pecans
- 4 squares Lindt 85% chocolate
- 15 pecan halves
- Combine the butter, sweetener, caramel and vanilla extracts, protein powder, and finely ground pecans in a medium sized bowl. Mix well until thoroughly combined.
- Roll into 15 truffles and place them on wax or parchment paper.
- Melt the chocolate in a ziploc bag in the microwave - about 1 minute. Cut the tip off of one corner and squeeze the chocolate onto the truffles.
- Press 1 pecan half into the top of each truffle.
- Chill. Serve.
