photo(13)My name is Mellissa Sevigny, and I am the creator of I Breathe I’m Hungry. I started the blog on a whim during the summer of 2011 – mostly as a way to stay in touch with friends and family back in Connecticut.

I’ve always loved cooking and entertaining, but when people would ask for the recipes I’d just shrug, because it was usually a little of this and a little of that.

I thought the blog would be a good way to catalog my recipes, and would force me to record the ingredients while I was cooking. It was also a new place to focus my photography efforts, which until then had been primarily flowers and macros.

In January of 2012, I planned to post a week of low carb recipes, mostly to appeal to the New Year’s resolution dieters.  I decided to start eating low carb again myself a few days into it, since I was already cooking that way for the blog. I’d done low carb with good results a few times in the past, but inevitably I’d quit after a few weeks because the food was boring.

Being surrounded by pizza, pasta, bread, etc. was just too difficult for me after awhile, and I would be so sick of steak and bacon and eggs that I would eventually cave in, and that would be the end of it.

When I started really applying myself to creating interesting and delicious low carb recipes, the response was amazing. I found out quickly that you guys had the same problem I did! So many of you had been having trouble sticking with a low carb plan, even though it was working, because you were bored with the food. That motivated me to keep experimenting, and here I am two years (and over 10 million page views) later – 40lbs down, author of The Gluten Free Low Carber, and a proud member of the low carb blogging community. I really never saw that coming when I started I Breathe I’m Hungry!

I love reading your comments and emails, and I have so much fun creating new recipes with you all in mind. It’s almost like having you all over for dinner at my house – but wow, that would get expensive! ha ha! Knowing that my recipes are helping so many of you reach your goals through low carb eating, really makes me happy. I still live in South Carolina with my amazing husband (aka. “Mr. Hungry”), our son (“Hungry Jr.”), and our three very spoiled cats.  Matt is a talented stone mason, and we have our own business, Old World Stone and Garden.  We work primarily in the Columbia and Charleston areas of SC, but will travel if the job is right.  I also hire out for recipe development, food photography, and freelance writing.

    Hi Mellissa, I found your website tonight after searching Pinterest for low carb recipes. I’ve since been pouring over your recipes for about 2+ hours! I just wanted to say a huge thank you & let you know that I am absolutely in awe of how clever & creative you & your collection are. Thank you so much for sharing it with us all. I am someone who has struggled with my weight my whole life & have recently reached lost over 70 pounds to get to a very healthy weight. The only way I can maintain is to lead a paleo lifestyle with the occasional indulgence of dairy. Your site is therefore a Godsend & so incredibly impressive / helpful.     Have you thought about trying some of your recipes to also be lactose free? Only curious cause my son has a gluten intolerance and lactose intolerance. Ive notice alot more products on shelves becoming lactose free and most brick cheese are. I have substituted lactose free milk for regular milk in a few things like mac and cheese or mashed potatoes and you cant tell the difference. But im not sure if it would change consistency for some of your recipes. Correct me if I am wrong but when my son was seeing a GI doctor I recall him telling us that most Celiac disease (gluten intolerance) patients also have lactose intolerance so it could be very beneficial for you and your fans.       Hi Jamie,

      A lot of the recipes can substitute coconut milk for the heavy cream (use your own discretion) or coconut oil, or olive oil for the butter. I do have quite a few dairy free recipes (though I do love cheese obviously!!) and you can find them by typing Whole 30 into the search bar since all the whole 30 compliant recipes have to be dairy free. Enjoy!

I am just on my first week of low-carb dieting as a former sugar addict, and now I don’t think it will be as hard. Just wanted to thank you for the work you’ve put into this :)

    hiya

    loving your blog and recipes. Being diabetic and Coeliac myself, so great to have some lovely recipes to follow. I am now aiming to go Low carb but was wondering from your menus, do you drink Tea as well as water? Am asking because us British love our cup of teas and so need milk…but don’t see this included..

    I found your blog by googling “egg fast”, and found that and so much more. I have survived day 1 of the egg fast today and am looking forward to it…being over. Your site is very charmingly rendered, and I enjoy your wit. What sealed the deal, however, was your having three cats. I have just put my three on the “catkins diet”, and we are all enjoying fat and protein without grains.
