I love corned beef hash. LOVE. IT. But here’s my dirty little secret – my favorite kind is from a can. I’m not proud of it but there is.
My husband loves it too but it’s something we rarely indulge in because it’s just so bad for you. I’m pretty sure when I do eat it I can hear the tiny screams of my arteries begging for mercy. I block the little whiners out because they can just suck it up once in awhile as far as I’m concerned!
Alas, the salty, greasy, crispy, deliciousness that is canned corned beef hash is not on the menu at my house for awhile since I’m still going strong on low carb – so I created a homemade version using cauliflower.
I’ll be honest with you, I was skeptical going into it but thought it might be worth a try. Was it ever! While it doesn’t come close to the flavor of my beloved canned hash, it was really delicious in a different way and SO MUCH healthier for you! Even if you aren’t low carbing it this is a tasty alternative – or you can easily substitute diced potatoes for the cauli for a more traditional style like I did for my husband. Top it with two poached eggs and ahhh… breakfast bliss!
PrintCorned Beef and Cauliflower Hash (Low Carb and Gluten Free)
- Yield: 4 1x
Ingredients
- 1 Tbsp olive oil
- 2 cups corned beef, chopped
- 2 cups raw cauli, chopped
- 1/2 cup chopped onion
- Salt & pepper
Instructions
- Heat the olive oil in a medium saute pan (I used cast iron to get it nice and crisp.) Add the corned beef and cook for a few minutes to render any fat out. Add the cauliflower and cook over medium heat for about 8 minutes, stirring occasionally. You want the cauliflower to caramelize so don’t over stir it. Add the onions and cook for another 5 minutes until softened and slightly browned.
- Season with salt and pepper.
Notes
I used leftover corned beef that I had trimmed all of the fat off of so I added a little extra olive oil to mine at the end because it was drying out a bit. If you want to make this but don’t want to bother with making the corned beef first, they do sell corned beef in a can and you can cook that down, drain off the extra fat and then add your veggies and fry until browned.
You can omit all of the olive oil if you are using the canned stuff because it’s pretty greasy (and mmmm salty) to start with.

If you like canned hash, why not make this with Hormel canned corned beef?
Sherrie says
OMG! This stuff is delicious! I honestly didn’t miss the potatoes at all – the cauliflower doesn’t taste like cauliflower at all. I put a fried egg on top and that was dinner! And leftovers this morning for breakfast. I will have to try the one with radishes next but this was definitely a keeper!

This is one of those recipes that leaves you smacking your head and wondering why I didn’t think of it. Just like the author I so missed my beloved canned Corned Beef Hash which weighed in at 23 grams of carbs per serving. The true test though, was my non keto eater husband loving it as much as I did.
Mellissa Sevigny says
Glad you both liked it Debbie! You should definitely try my radish and corned beef hash next, it gets crispy like potatoes and we like it even better than this one!
Debbie Florio says
Lol my hubby is standing next to me as I’m reading this and he’s totally on board. You had him at crispy😉

I made this for breakfast this morning. I have to admit I was a little skeptical of the cauliflower, but when you do it right, this stuff is MAGIC! Not to mention incredibly easy to make! This is definitely going into my breakfast rotation. Might even make it again tomorrow! ;)
Serena says
Can this be refrigerated? Or would that ruin it?
Mellissa Sevigny says
You MUST refrigerate any leftovers or they will spoil and you’ll get sick.
Jason says
Will a pound of sliced corned beef equal 2 cups? I don’t want to get too little or too much. Please advise

Canned corn beef was the one thing my husband really missed. He’s declared this better than the real thing (from a can, of course)
I stuck it in the InstantPot for 90 minutes with 4 cups of water and a quick release, and fried it in a pan with frozen riced cauliflower.
He’s in love.
Thanks!

Funny, I’ve always thought the canned corned beef hash tastes like dog food!
I’ve been cooking for a friend with health issues. One of my challenges is to tempt her to eat more, and the key to this has been corned beef. She loves it! And I am learning to love it even more than I used to, perhaps because I am improving at cooking it with all of this practice.
I’m about to go back to my low carb ways (long story), so this is right up my alley. Now i can make regular hash for her, and this version for me. Thank you, thank you, thank you!
Tracy says
Awesome…. made it for breakfast this morning and YUM YUM YUM!
Thanks so much.

I’ve been craving that crispy, salty, no-good-for-you decadent deliciousness and when I Googled low carb corned beef hash, lo and behold, your recipe came up! Can hardy wait to get some corned beef and try it!
Corinne says
I would really love a printable version. I’m working on Week 3 Keto, and getting frustrated that so many menu plans and recipes are not formatted to be printable. I would love to try this if only I can get it printed.
Mellissa Sevigny says
I just haven’t had time to go back and format all the old posts Corinne – if you cut and paste into a word document you’ll be able to print easily until I get them all into ziplist!
Tom says
It was great with a softboiled egg served over it.
Mellissa Sevigny says
Served with a runny poached egg is still my favorite way to eat it too Tom! Glad you enjoyed it! :)
Allison says
was thinking of giving this a go with turnip instead of cauli or potato as the daughter won’t touch cauliflower, and turnip is fairly lowish in rhe grand low carb scheme (compared to potato anyhoo!)
Mark says
I made this with orange cauliflower — superb!
Mellissa Sevigny says
Oooh, I bet that was pretty! Glad you liked it!

I finally tried this today. It has been on my “must try” list since you posted it. Let me just say… THANK YOU for bringing back my favorite breakfast! I used canned corned beef, fresh cauliflower, and topped it with an over easy egg. It taste soo good! Im sharing with the family, but I really want to keep it all to myself!

It’s been far too long since I made this recipe at home, your comment reminded me how good it was – definitely putting it on the menu at our house for this week! So glad you liked it! :)
Biz says
Yep, corned beef hash out of the can is my dirty little secret too – I do indulge when I see it on a breakfast menu though – that and a Reuben sandwich I can’t pass up!
Thanks for the recipe!! Totally making this next week. :D
Mellissa Sevigny (sevimel) says
You’re welcome! My husband and I order it out too but we can’t get it down here in the south – guess it’s more of a northern thing! As is a good egg sandwich for some reason – can’t get that down here either. At least nowhere we’ve tried in our area. It’s all biscuits and sausage gravy. I like biscuits but sausage gravy is gross to me – and gravy shouldn’t be white! (shudders) Eewww.
Mmmm…I love a good Reuben too!

Well, see now you have reminded me of and made me crave that wonderful stuff you could fry crispy on the outside, mushy and greasy on the inside – oh I loved that canned hash LOL! But this DOES look good, so I am going to give it a try.
Mellissa Sevigny (sevimel) says
Just reading everybody’s comments is making me hungry for it! nom nom…. crispy…mushy….greasy….sigh. You just can’t beat it! But since I can’t have it, this recipe definitely did the trick….mostly! :)
Chef Connie says
How funny, I loved it from a can too with potatoes….crispy ones. But those being a huge no no I am picking up some corned beef brisket at Costco this weekend and will try this out.
Mellissa Sevigny (sevimel) says
Oh yeah, you have to really cook the crap out of the canned stuff until they get nice and crispy – otherwise it’s just kind of like dog food. Sadly, I’d still probably eat it though! Hope you like the cauli version!
Tracy Altieri says
True confessions – I too, love it from the can – have since I was a kid. I’m willing to give yours a try though!
Mellissa Sevigny (sevimel) says
Right?!?!? Glad I’m not the only one! This recipe can’t touch the canned version but it’s a great substitute if you’re trying to eat healthier!
Terese says
Love this idea! This will be a big hit in my house!
Mellissa Sevigny (sevimel) says
I hope it is Terese! I loved it but my husband still prefers potatoes in his – I have yet to bring him over from the “dark side!” :)
