This delectable keto sheet pan curried chicken is super fast and easy to make and reheats well all week long, making your keto meal prep a breeze! Squeaky Clean Keto and Whole 30 friendly, this keto sheet pan meal is so tasty that nobody will believe it’s “diet” food!
Whether you’re doing the Squeaky Clean Keto Challenge (SCKC) the Whole 30, dairy free keto, or just looking for easy and delicious healthy chicken dinners – this keto sheet pan curried chicken recipe is for you!
Sheet pan dinners are my new favorite thing, next to Instant Pot meals – because: EASY. And who doesn’t love having a little extra time to hang out with your loved ones after dinner, or maybe just binge watch Netflix for a few hours before bed? You do you, no judgement here!
Either way, we’ve got dinner covered, and it’s awesome.
I couldn’t fit cauliflower in the title, but it’s an important component of this keto sheet pan dinner, and rounds it out to make a complete meal. Drenched in a coconut based curry sauce, the cauliflower gets all toasty and slightly sweet – so good that you might want to skip the chicken and just start making this cauliflower to eat as a side dish to EVERY. THING.
I threw in some jalapeños for a spicy kick, and while I love my curries hot, you can absolutely omit them if you’re tastes run to a milder dish.
I can’t emphasize enough how easy this keto sheet pan curried chicken is to prepare.
Season your chicken.
Place on a cookie sheet.
Toss your cauliflower with the coconut milk and seasonings.
Add to the cookie sheet.
If you can’t even with cauliflower, you can try subbing it with broccoli, radishes, or even chopped turnips instead. I haven’t actually tried them as substitutes, but the texture and flavor profiles of these should make them a good fit.
Hate chicken thighs or meat on the bone? You can make this keto sheet pan curried chicken recipe with boneless breasts, but be sure to oil them well before seasoning so they don’t dry out.

this is the second meal we’ve made that my in-laws ate and ENJOYED! Typically they are the WORST to cook for. We loved it too and will absolutely make it again. Thank you, Melissa, you have the BEST recipes!

Thanks so much Kay, this comment made my day! Hope the recipes continue to be a hit with the in-inlaws! 🙌🏻
This is amazing! It’s in our regular rotation. I double the sauce ingredients to make sure there’s plenty for the leftovers. And sometimes I mix some radishes in with the cauliflower – they really go great with the curry sauce!
I am going to try this tonight!
Loved everything about this recipe! Easy and very flavorful. What is not to love about curry, coconut milk mixed with cauliflower and chicken thighs! I will definitely make this again and again.
My husband and I love the Curried Chicken and Cauliflower recipe
Thanks, Deanna Cox
So easy to make and super delicious. There are times when I’m up for using 10+ different spices and herbs to make a recipe, but this is so good and fast with just garlic, onion and curry powder.

This is now in our rotation. So easy and delicious!
Can you use boneless thighs? I know they cook faster so I’m wondering how a faster cook time effects the cauliflower? Sorry I’m not a great cook and regular bone in this have become hard to find in my grocery stores. Thanks

We made this for dinner last night. It was SO easy and absolutely delicious! Thank you. We didn’t have any fresh jalapenos–we added ~1/2 cup of pickled jalapenos to the cauliflower instead. It turned out great, added a little kick but nothing insane. We used a whole head of cauliflower instead of 3 cups, which was a maybe 5 cups and it was fine. :)
Made two sheet pans of this tonight for dinner. So easy and delicious. I forgot how much I love the taste of curry. Thank you for another amazing but simple recipe. I have read your blog for a couple years and just received Keto For Life…it’s wonderful. Thank you for SCKC! First time in 30 years I have gone more than a few days without Diet soda. Feeling successful and energized.
Are you using canned or refrigerated coconut milk?

I would prefer chicken breasts. how would you adjust time/temp?
This looks like a winner. What’s your best guess on what would happen with substituting chicken breasts AND coating them in the coconut milk/spice mixture as well as the cauliflower? just wondering if you’d heard any results of that to spare me a botched experiment…

Haven’t tried it but it could work – let us know how it goes!
