I’m not complaining mind you – I was, and still am, very excited to have stocked up on spaghetti squash these last few weeks.
I’m also broke now, because they are crazy expensive like so much of the non tropical produce you can get here.
In my previous non-keto life, shrimp scampi was one of my go-to recipes on weeknights, or when we were having a big group of friends over. It literally comes together in minutes – throw just a few flavorful ingredients together in a pan, cook for just a few short minutes, and you’re done.
Just because I don’t eat pasta anymore, there’s no reason not to enjoy all the other perks of this classic dish – and so I give you this easy keto shrimp scampi recipe – made with spaghetti squash of course.
Now if spaghetti squash is hard to get where you are, or you just don’t want to spend eleventy billion dollars on one for this keto shrimp scampi recipe – feel free to serve this over spiralized zucchini noodles (aka. noodles) and it will be just as good!
Or, if your non-keto family just has to has their pasta – no problem, just make the keto shrimp scampi as is, then serve yours over a keto friendly veggie noodle and theirs on the traditional kind.

Easy Keto Shrimp Scampi – Low Carb

Quick and delicious, this easy keto shrimp scampi comes together in just minutes and is served over spaghetti squash or zucchini noodles. Low carb, Atkins, Gluten Free and Paleo/Whole30/SCK options.
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 tablespoon garlic, minced
- 1/2 cup dry white wine (I used sauvignon blanc)
- 1/2 teaspoon kosher salt (or to taste)
- 1/8 teaspoon ground black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 pounds extra large shrimp, peeled and deveined
- 1/3 cup fresh parsley, chopped
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 3 cups cooked spaghetti squash or zucchini noodles
- Heat the butter and oil in a large saute pan.
- Add the garlic and cook for 2 – 3 minutes until fragrant.
- Add the wine, salt, black pepper, red pepper and cook for 2 minutes.
- Add the shrimp and cook 2 – 3 minutes or until opaque.
- Remove from the heat and stir in the parsley, lemon juice, and lemon zest.
- Serve over hot, cooked spaghetti squash.
- Garnish with parmesan cheese if desired (optional)

Great dish. I too live in Belize and know the joy of finding spaghetti squash. I spiralize all kind of vegies; peppers, yellow squash, zucchini, saute a bit and toss for a very colorful meal. Hubby likes as well.
I used either too much lemon juice or zest, or maybe both. Just eyeballed it and didn’t measure. I had made some sauteed mushrooms so I added those and it brought the flavors back right. Really enjoyed though next time, I’ll add more liquid because the want enough of the yummy sauce. Thanks for the recipe!
I have never thought of using spaghetti squash with shrimp scampi. I love spaghetti squash. I need to try this next time!

Made this for dinner last night and it was ah-mayyyy-zing. Even my non-keto non veggie eating husband devoured it. I put a crap load of red chillies and used veggie broth instead of wine and it was so so good. Even brought the leftovers for lunch today. Will definitely be making this again soon.

This was DELICIOUS! I cut the recipe in half and the sauce was a little skimpy for me at the end, so I added 1/2 cup of cream, and it was so good! My non-keto husband loved it as well!

butter isn’t paleo but ghee is. would you use the same amount of ghee as butter in this recipe to make it truly paleo?
