These keto egg fast snickerdoodle crepes are easy to make and so delicious that even your non keto family members (especially the kids) will adore them!!! They are also keto egg fast friendly for a major win/win situation!!!
Before I get to today’s keto egg fast snickerdoodle crepes recipe, here’s a brief update on my 5 day Keto Egg Fast. This morning I was down another .4 lbs, bringing my total lost so far to 7 pounds in four days! Tomorrow will be my final weigh-in from being on the keto egg fast, and I’ll post those results as well.
I’m really curious to see whether or not I’ll gain the weight back immediately after going off this keto egg fast diet plan. I’m hoping not – otherwise this will have been pretty much a waste of time!
I’ll be tracking my weight over the next few days while off the egg fast plan, during which I’ll be eating really strict keto – lower in protein than usual, definitely less than 20g net carbs, and with a focus on fat in the form of butter, MCT oil, and olive oil.
I’ll keep a strict log of what I’m eating those days, as well as any weight loss/gain, and will post my final results for my keto egg fast this weekend – followed by a 5 Day Keto Egg Fast Diet Menu Plan for those of you that want to try it out!
Yesterday I ate less eggs but more cheese, which was a byproduct of being gone all day and not having done enough prep. I ended up eating mostly string cheese and cream cheese pancakes all day, which skewed my egg – fat – cheese ratios a bit.
Not sure if it made a difference or not, and I was still down .4 this morning, so I’m not too worried about it. I also did strenuous yard work for about 6 hours yesterday – I was tired by the end, but had the energy to get it done, which is further proof that the body is able to burn fat for energy in the absence of carbohydrates.
What I Ate on Day Four of my Keto Egg Fast
6 eggs
2 Tbsp MCT oil (in my bulletproof coffee)
4 Tbsp butter
2 Tbsp mayonnaise
3 oz cream cheese
2 oz cheddar cheese
3 string cheese
120 oz spring water
Today is my last day of the keto egg fast, and I’m really looking forward to tomorrow when I can eat some veggies again. I miss texture in my food! That being said, this hasn’t been too painful – and these keto egg fast snickerdoodle crepes are one of the reasons why!
People have been worried that after doing the egg fast they might hate eggs. I don’t find that to be true so far. I actually look forward to my two eggs fried in butter every morning – that’s the only time that I eat them plain, so I’m not sick of it yet.
I change it up throughout the day with different preparations – both sweet and savory. I think that’s one of the most important things to avoid egg burnout when doing this fast. These keto egg fast snickerdoodle crepes (an easy variation of my low carb cream cheese pancakes recipe) are one of the sweet preparations, and also one of my favorite ways to eat the eggs on this keto egg fast diet plan.

Keto Egg Fast Snickerdoodle Crepes
- Yield: Approximately 4 servings 1x
Description
A delicious keto egg fast crepe recipe based on the popular snickerdoodle cookie! Low carb, keto, lchf, egg fast, and Atkins diet friendly recipe.
Ingredients
For the crepes:
- 6 eggs
- 5 oz cream cheese, softened
- 1 tsp cinnamon
- 1 Tbsp granulated sugar substitute (Splenda, Swerve, Ideal, etc.)
- butter for frying
For the filling:
- 8 Tbsp butter, softened
- 1/3 cup granulated sugar substitute
- 1 Tbsp (or more) cinnamon
Instructions
- Blend all of the crepe ingredients (except the butter) together in a blender or magic bullet until smooth. Let the batter rest for 5 minutes.
- Heat butter in a nonstick pan on medium heat until sizzling.
- Pour enough batter into the pan to form a 6 inch crepe. Cook for about 2 minutes, then flip and cook for an additional minute.
- Remove and stack on a warm plate. You should end up with about 8 crepes.
- Meanwhile, mix your sweetener and cinnamon in a small bowl or baggie until combined.
- Stir half of the mixture into your softened butter until smooth.
- To serve, spread 1 Tbsp of the butter mixture onto the center of your crepe.
- Roll up and sprinkle with about 1 tsp of additional sweetener/cinnamon mixture.

Since I eat my egg fast in two meals per day, four eggs for lunch and five for dinner, I found the carb count using cream cheese a bit high if I’m eating the whole recipe. Today I substituted feta cheese for the cream cheese, as the four ounces of whole milk feta had about half the carbs of the cream cheese. They tasted good, but the texture was very wet and cottage cheesy. They absolutely didn’t hold together as pancakes, and I ended up cooking them into a sweet-ish scrambled egg thing. It had a very odd texture, but tasted fantastic. A bit saltier than the cream cheese, but not overly strong feta flavor. For now I guess I’ll stick with the cream cheese, just using about two ounces instead. I did make your recipe for the crepes the first time as written, and they were fantastic. I just wish I wasn’t getting so many carbs in one meal. I might also just eat half the recipe with a couple of boiled eggs on the side, and that would cut the carbs per meal as well.

Lauren, I did refrigerate it! I made a regular batch of batter, cooked 3 crepes (OMGosh they are DELICIOUS!!!!!!) and stored the rest of the batter in a mason jar in the fridge. Next day I wanted them again for a snack and all I did was give the jar a good shake then proceeded to make 5 more. Hubby ate them too this time and they were just as good as the day before.

Hey Betsy, I don’t know if you’ve found an alternative since your original post but I occasionally make these with neufchatel or 1/3 less fat cream cheese if I’m not making them for the egg fast. I am not doing the egg fast, so I changed it up.
I used your recipe for the batter but made up my own filling and topping. I made a berry topping while I was waiting the excruciatingly LONG 5 minutes for the batter to rest before cooking the crepes. I was full after 2 crepes.
One of the secrets to making crepes is that after you pour the batter, move the pan around a bit to make the batter move out toward the edges. It makes it thinner and cooks better.
Mixed berry syrup recipe
I used a handful of blueberries and cut up one large strawberry, added a tsp Lakanto golden sweetener and a very little bit of cinnamon and vanilla. I boiled it until the crepes were ready.
For the filling, I spread softened cream cheese on the crepes and added 1/2 strawberry. I topped it with the berry syrup. Heaven!

These crapes. Are the best thing. I have made yet on keto. I literally cannot handle how insane these were. Yes it did take some figuring out how to flip them to make them look beautiful, but even the less beautiful ones were absolutely delicious. The best trick for me was to go for smaller, oblong crepes, about 5 inches long and 3 inches wide. I think it yields too much butter for what the recipe puts out, so maybe 6 tablespoons for the mix would be better. Of note, I weighed the butter that I used to cook and it took an additional 4 tb there.

I think part of it is about retraining how we eat and how much we eat… I am on Day 4, and haven’t felt hungry at all today (until tonight when these crepes took too long to cook!). It’s worth it though, in my opinion – I’ve been at a stall for about 3 months, and have lost about 2.5kg since I started on Sunday… while still having the energy and strength to continue my workout regimen (which I was a little worried about). I’m not sick of eggs yet – surprisingly! – but I am REALLY looking forward to my buffalo chicken wings for dinner tomorrow night!

Holy Toledo are these crepes ever good!!!! I am on day 3 of my egg fast and you have made it so much easier. I look forward to trying each of your recipes!!! Your carb count is off…not sure on the rest.
I just totaled the cream cheese, cinnamon, and eggs, and the total carb count is 18g, net is 13g. Divides by 4 is 4.5g, 3.25g net. Did you include the cinnamon??

Day 3 of my own egg fast and I’ve dropped 5lbs. So happy. I’m pretty much at my ideal weight but have put on 5lbs of not eating properly and needed something to kick this weight and get me back on the right track. These were delicious. I have to admit I love eggs and am not bothered at all by only eating eggs and cheese. I’m also trying to keep the cheese down. I was told I have candida and dairy has to be cut out or limited for the next 4 weeks to try and clear it up.

These are so good! I confess that I made just the base crepe with just eggs and cream cheese (no sweeteners or anything). I also confused the unsalted/salted butter and fried them in salted butter. The first bite tasted a bit like monte cristo bread, so I made “grilled cheese” with them. THEY WERE SO GOOD! I wonder if there’s a way to bake this, then fry it…!!

I made these for dinner, I cut the recipe in half just incase I didn’t like it. They were so delicious I ate them all, which is 2 serving and probably not what I was supposed to do but they were just too delicious. I made the buffalo omlette last night it was pretty good. I wrapped the egg salad in romaine lettuce for lunch yesterday and today, I liked it a lot.

The best low carb recipe for crepes so far. I tried many with different types of low carb flour, usually I couldn’t eat them , still too high in carbs for me, they were for kids. But these, not sticky, easy to work with and very low in carbs.I had crepes after many months…thanks!

The macros are not adding up for carbs when I use the erythritol. It is usually approximately the same carbs per amount for sugar, swerve, etc. The carbs seem to be way over those posted.

I chopped some fresh herbs und put them into the batter.
For the filling i grated some parmesan and mixed it with the cream cheese (did not use all for the batter), salt and pepper
But not sure if herbs are ok with an egg fast :)

I love the egg fast, because I LOVE eggs!! I haven’t weighed, but my clothes are looser after just 3 days. I liked the Snickerdoodle crepes, but they were too sweet even after I cut out some of the sweetener. I’ll make them again, with less sweetener, cut in quarters and use for dessert (or snack). Thanks for the great recipes. I cant’t wait to try the “ice cream”. YUM!

I made this in the morning, but I lowered the ratio of eggs to cream cheese so that I could cream cheese as the filling. It was absolutely delicious. If I don’t do well on my egg fast, it will be because I want to eat a dozen of these.

I hardly use any of the sweeteners, is the sprinkle filling of splenda and cinnamon taste over powering of fake sweetener taste or bitter after taste?

Splenda has always had a strong aftertaste to me. I prefer Swerve or Truvia and I typically do pumpkin pie spice instead of plain cinnamon and that covers the fake taste too!

Swerve and Splenda do have an aftertaste, besides the fact that they are very bad for your health. I recommend an organic birch xylitol which tastes very similar to sugar without the health risks or bitter after taste. I buy mine on Amazon. Hope this helps.

Swerve is erythritol, which is just like xylitol – it’s a sugar alcohol that doesn’t impact blood sugar. Organic isn’t any better than conventional either. There isn’t anything wrong with using Splenda, or Equal, or even Sweet and Low. I’d really like to see your sources on the “health risks” you claim.

I put banana extract in the batter, and just sprinkled cinnamon ontop. I am dairy free and In place of the cream cheese I used homemade avocado mayo. I personally use Erythritol, and I added a few drops of English toffee stevia to my butter cinnamon syrup, and just sprinkled erythritol ontop. I only added about a tsp erythritol sweetener to the eggs. It was so good!!
