These fluffy keto pancakes were first debuted in a my squeaky clean keto challenge ebook from 2023. I’ve decided to share this delicious and healthy pancake recipe here on the website so that it can reach a wider audience – especially with January on the horizon.

Originally created for the Squeaky Clean Keto Challenge, these fluffy keto pancakes are delicious no matter what your eating style, and are especially perfect for anyone looking for dairy free, nut free, and gluten free low carb pancake options.
Growing up, pancakes were a special treat that my mom made on snow days or other times when we weren’t rushing out the door in the mornings. So they felt indulgent and made breakfast (or dinner – IYKYK) more fun and meaningful.
Lots of people associate pancakes as a feel good, happy food – so giving them up on a diet (keto or otherwise) can be tough.

Early on in my low carb days I posted the still wildly popular (I ate them this morning in fact) keto cream cheese pancakes, and more recently for my high protein peeps, I posted these easy high protein pancakes.
But a fluffy keto pancake, that felt like the real thing and still met some pretty strict squeaky clean keto, or dairy and nut free criteria was a bit harder.

I’m thrilled to report that these fluffy keto pancakes are super satisfying, incredibly healthy, and totally guilt free.
So many people that purchased the original e-book fell in love with these squeaky clean keto pancakes, that I just had to post them here on the blog. I hope that you will try them and love them as much as we all do!

Just a quick note that in the photos, a sugar free berry compote is shown with the pancakes. I will post that recipe another time soon.

Fluffy Keto Pancakes – Nut and Dairy Free
- Total Time: 18 minutes
- Yield: 3 servings, 6 pancakes 1x

Description
Move over bacon and eggs, these pancakes are a squeaky clean keto game changer!
Ingredients
- 4 eggs
- 1/2 cup hemp milk
- 1/4 cup coconut flour
- 1 tablespoon psyllium husk powder
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 tablespoon butter for frying
Instructions
- Combine all ingredients except for butter in a small blender.
- Blend for 20 seconds, or until smooth.
- Let the batter rest for 2 minutes – It will be thick.
- Heat the butter in a nonstick skillet over medium heat.
- Drop 1/4 cup spoonfuls into the pan and cook for 2 minutes, or until bubbles appear on the surface.
- Flip, and cook for an additional 1 minute.
- Remove and repeat with the remaining batter.
ALTERNATIVE METHOD
- Butter a small ramekin or mug and place 1/4 cup of batter inside.
- Cook, uncovered for 30-40 seconds in the microwave.
Notes
- This batter can also be cooked in the microwave like a muffin – see alternative method in instructions.
- The batter won’t keep, so cook all of the pancakes at once and then store in the fridge and reheat as needed.
- The photo shows these served with the berry compote, but the nutrition info below is for the pancakes alone, so if you add the berry compote be sure to count those carbs too.
