This Keto Chocolate Fudge Haystacks recipe was born of my desperate desire for something sweet and chocolatey RIGHT NOW, coupled with my being too lazy and impatient to want to actually bake something – or wait for said something to be ready to eat. This pretty much describes my low carb life lately.

The shredded coconut in these Keto Chocolate Fudge Haystacks makes them chewy and cookie-like, and the nuts add a pleasant crunch and earthy flavor. If you are allergic to nuts then you can certainly omit them, or if you have a specific nut preference, you can sub in your nut of choice.
If you’re a fan of fruit and nut bars, you can throw in a couple of dried cranberries or cherries (or ewww, raisins) into these keto cookies, but be mindful of the extra carbs if you do.
Mr. Hungry and I have been grabbing one of these no bake keto fudge haystack cookies for breakfast along with our coffee on busy mornings, and I’ve found that it easily keeps me satisfied until lunchtime! They make a great after dinner treat too – or pretty much whenever you want a blissful few bites of creamy chocolate goodness!
My handy dandy cookie dough scooper is in storage in New Jersey right now, so I just used two spoons to form my keto haystack cookies. It’s much easier and faster if you do have a scoop though, so I’ll be bringing one back on my next trip to the States!

Keto Chocolate Fudge Haystacks – No Bake
- Total Time: 5 minutes

Description
These easy no bake low carb chocolate fudge haystacks are loaded with chocolate, coconut, and walnuts! Creamy, chewy, fast and easy – what more could you want in a keto cookie!?
Ingredients
- 4 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 3/4 cup erythritol sweetener *
- 1/4 cup premium unsweetened cocoa powder *
- 1/8th tsp kosher or coarse sea salt
- 1 cup unsweetened shredded (or desiccated) coconut
- 1/3 cup chopped walnuts
- 1 tsp sugar free vanilla extract
Instructions
- Cream the butter, cheese, sweetener and cocoa powder together until smooth. You can use a mixer or a fork for this step.
- Add the vanilla extract, salt, coconut and walnuts and stir well.
- Spoon out into 1 inch balls or haystacks.
- I prefer them chilled for about 30 minutes, but if you can’t wait that long I don’t blame you!

These are ricidulously easy to throw together in a few minutes and even more AMAZING for how they taste! I had a last minute event to attend and wanted to bring a treat to share. This recipe took less than 1/2 hour to put together and clean up afterwards. Left theto chill in the freezer before heading out. Wow are these full of flavor! So rich and decadent. I must have done something wrong. I just made these but could not get the granular sweetener to melt into the butter/cream cheese. We loved these! Mine seemed a little soft out of the mixer so I tossed in a bit of extra coconut and that did the trick. We sprinkled half with a tiny bit of cinnamon sugar before chilling, which was nice. For next time, I’m going to double the recipe, split it up and to each segment add either a) dried cherries b) red pepper flakes c) pistachios and d) bacon. Delicious. For those who found them gritty, you may have used a granulated sweetener. Because it’s a no bake recipe, granules won’t dissolve. I only had granular Swerve so I buzzed it into Confectioner’s powdered sugar in the food processor. Not gritty & tasted good. I also put mine in the freezer for 20 mins to help firm them up.

Thank you for this recipe! A staple at my house, my husband and 2yo love them! I doubled the batch and freeze them every Sunday and they get eaten throughout the week. Our favorite varietion: almond slivers instead of walnuts. Toast the coconut and almonds in the toaster oven, lightest setting (careful they burn easily, especially the coconut). In addition to the vanilla, I add the same amount of almond extract. Like a almond joy but better.

absolutely awesome recipe!!? Use something called swerve. You can get it at Meijer if you have one of those or any health food store. I buy the swerve that’s like powdered sugar. You would never know that it’s artificial sweeteners in it and it’s good for you. They have linked a lot of positive health benefits to swerve. going any health food store or online and you will find it instantly. they sell a granule and a powder swerve. also for you pet lovers, it safe to be around your pets BUT unsweetened cocoa is NOT safe around PETS. These were so amazing! My daughter and husband even thoroughly enjoyed them, and my husband claims he doesn’t like coconut (shhhh….). I can’t tolerate dairy, so I changed them up, but they still turned out beautifully, although I have no idea how they’d compare to the original recipe. I did:
1/2 cup + 4oz (to take the place of the cream cheese) coconut oil
1/2 cup erythritol sweetener + a dash of unbuttered powdered stevia
3T milk (I used almond)
1/3 cup premium unsweetened cocoa powder *
1/8th tsp kosher or coarse sea salt
1 cup unsweetened shredded (or desiccated) coconut
1/3 cup chopped walnuts
1 tsp sugar free vanilla extract
I heated up the milk first and dissolved the “sugar” and salt in it to avoid the graininess. Then I actually melted the coconut oil in it, removed from heat, and followed the rest of the steps but let the entire saucepan cool down in the fridge for about 15 minutes before dropping onto my silco mat so the chocolate wouldn’t be runny. OMG! SO AMAZING!!!!

I can’t make the recipe builder re-create 1.2 net carbs per serving that you have listed. I got 13 haystacks and with that I get over 7 net carbs a piece. The swerve is 4 carbs per teaspoon, I used 1/2 cup so 24 tsp=7 carbs per serving just by itself. The shredded coconut I have says it is 4 carbs/4 fiber per 2 T so I am going to say it cancelled itself out. The walnuts are 6 carbs/4 fiber for around 1/3 cup. 12c/8fi in the cocoa powder. =.46 net carbs per haystack. Add that to the 7 from Swerve and you have at least 7.46 net carbs. What am I missing here?

Swerve carbs are from erythritol which has zero impact on blood sugar and aren’t counted in the net carbs.

First time making a fat bomb, and first time using Swerve. They taste good, but are very sweet. I will reduce the amount of Swerve next time. I can’t for the life of me figure out how you get 1.5 net carbs. A cup of unsweetened coconut has 32 g of carb, and 1/2 cup of cream cheese has 8 g. I made 19 balls, and I am calculating 2.1 net carbs per ball. 16 balls would equal 2.5 g. What am I missing?

I know this is an old post, but perhaps it will help someone else. Unsweetened coconut should have around 2g net carbs per ounce. If the one you are using has 32g net carbs for a cup, it’s definitely sweetened.

My fat bombs had a graininess issue — the sweetener was gritty. I was storing all the balls in a glass storage container so last night I just microwaved and stirred them until they were bubbling and kept tasting until the chocolate was smooth. Then I popped them into the fridge. This morning I grabbed (dug out) a spoonful and they are really smooth.
I’ll just leave them on the counter a while and cut them like fudge.

Love these! I made them last week during my first week of keto. We were stuck at home during a blizzard so I had to sub ground cacao nibs for cocoa powder (would highly NOT recommend this!! ?). I used roasted almonds in place of the walnuts and salt and this was very good. The one thing I discovered is that I hate the taste of cold butter. Huh. Who knew? So this time I subbed 1/2 coconut oil for 1/2 the butter and it was perfect. The other thing is that after several years without artificial sweeteners, even the Swerve confectioners, which I think is quite good, still has that aftertaste in larger amounts. So I tried just using 1/4 cup and it was great. I’m taking them to myvwry non-Keto parents house this weekend so we’ll see what they think! Thanks Melissa!!

I didn’t see the unsalted butter I had until it was too late, so I ended up using salted – I definitely think unsalted would be better, but these are still great! The batter before I added in the nuts and coconut reminded me of great chocolate frosting – I might even use it to frost a cake one of these days.
