I love corned beef hash. LOVE. IT. But here’s my dirty little secret – my favorite kind is from a can. I’m not proud of it but there is.

My husband loves it too but it’s something we rarely indulge in because it’s just so bad for you. I’m pretty sure when I do eat it I can hear the tiny screams of my arteries begging for mercy. I block the little whiners out because they can just suck it up once in awhile as far as I’m concerned!

Alas, the salty, greasy, crispy, deliciousness that is canned corned beef hash is not on the menu at my house for awhile since I’m still going strong on low carb – so I created a homemade version using cauliflower.
I’ll be honest with you, I was skeptical going into it but thought it might be worth a try. Was it ever! While it doesn’t come close to the flavor of my beloved canned hash, it was really delicious in a different way and SO MUCH healthier for you! Even if you aren’t low carbing it this is a tasty alternative – or you can easily substitute diced potatoes for the cauli for a more traditional style like I did for my husband. Top it with two poached eggs and ahhh… breakfast bliss!

Corned Beef and Cauliflower Hash (Low Carb and Gluten Free)
- Yield: 4 1x
Ingredients
- 1 Tbsp olive oil
- 2 cups corned beef, chopped
- 2 cups raw cauli, chopped
- 1/2 cup chopped onion
- Salt & pepper
Instructions
- Heat the olive oil in a medium saute pan (I used cast iron to get it nice and crisp.) Add the corned beef and cook for a few minutes to render any fat out. Add the cauliflower and cook over medium heat for about 8 minutes, stirring occasionally. You want the cauliflower to caramelize so don’t over stir it. Add the onions and cook for another 5 minutes until softened and slightly browned.
- Season with salt and pepper.
Notes
I used leftover corned beef that I had trimmed all of the fat off of so I added a little extra olive oil to mine at the end because it was drying out a bit. If you want to make this but don’t want to bother with making the corned beef first, they do sell corned beef in a can and you can cook that down, drain off the extra fat and then add your veggies and fry until browned.
You can omit all of the olive oil if you are using the canned stuff because it’s pretty greasy (and mmmm salty) to start with.

was thinking of giving this a go with turnip instead of cauli or potato as the daughter won’t touch cauliflower, and turnip is fairly lowish in rhe grand low carb scheme (compared to potato anyhoo!)

I finally tried this today. It has been on my “must try” list since you posted it. Let me just say… THANK YOU for bringing back my favorite breakfast! I used canned corned beef, fresh cauliflower, and topped it with an over easy egg. It taste soo good! Im sharing with the family, but I really want to keep it all to myself!

You’re welcome! My husband and I order it out too but we can’t get it down here in the south – guess it’s more of a northern thing! As is a good egg sandwich for some reason – can’t get that down here either. At least nowhere we’ve tried in our area. It’s all biscuits and sausage gravy. I like biscuits but sausage gravy is gross to me – and gravy shouldn’t be white! (shudders) Eewww.

Well, see now you have reminded me of and made me crave that wonderful stuff you could fry crispy on the outside, mushy and greasy on the inside – oh I loved that canned hash LOL! But this DOES look good, so I am going to give it a try.

How funny, I loved it from a can too with potatoes….crispy ones. But those being a huge no no I am picking up some corned beef brisket at Costco this weekend and will try this out.

Oh yeah, you have to really cook the crap out of the canned stuff until they get nice and crispy – otherwise it’s just kind of like dog food. Sadly, I’d still probably eat it though! Hope you like the cauli version!
