I love corned beef hash. LOVE. IT. But here’s my dirty little secret – my favorite kind is from a can. I’m not proud of it but there is.

My husband loves it too but it’s something we rarely indulge in because it’s just so bad for you. I’m pretty sure when I do eat it I can hear the tiny screams of my arteries begging for mercy. I block the little whiners out because they can just suck it up once in awhile as far as I’m concerned!

Alas, the salty, greasy, crispy, deliciousness that is canned corned beef hash is not on the menu at my house for awhile since I’m still going strong on low carb – so I created a homemade version using cauliflower.
I’ll be honest with you, I was skeptical going into it but thought it might be worth a try. Was it ever! While it doesn’t come close to the flavor of my beloved canned hash, it was really delicious in a different way and SO MUCH healthier for you! Even if you aren’t low carbing it this is a tasty alternative – or you can easily substitute diced potatoes for the cauli for a more traditional style like I did for my husband. Top it with two poached eggs and ahhh… breakfast bliss!

Corned Beef and Cauliflower Hash (Low Carb and Gluten Free)
- Yield: 4 1x
Ingredients
- 1 Tbsp olive oil
- 2 cups corned beef, chopped
- 2 cups raw cauli, chopped
- 1/2 cup chopped onion
- Salt & pepper
Instructions
- Heat the olive oil in a medium saute pan (I used cast iron to get it nice and crisp.) Add the corned beef and cook for a few minutes to render any fat out. Add the cauliflower and cook over medium heat for about 8 minutes, stirring occasionally. You want the cauliflower to caramelize so don’t over stir it. Add the onions and cook for another 5 minutes until softened and slightly browned.
- Season with salt and pepper.
Notes
I used leftover corned beef that I had trimmed all of the fat off of so I added a little extra olive oil to mine at the end because it was drying out a bit. If you want to make this but don’t want to bother with making the corned beef first, they do sell corned beef in a can and you can cook that down, drain off the extra fat and then add your veggies and fry until browned.
You can omit all of the olive oil if you are using the canned stuff because it’s pretty greasy (and mmmm salty) to start with.

This is one of those recipes that leaves you smacking your head and wondering why I didn’t think of it. Just like the author I so missed my beloved canned Corned Beef Hash which weighed in at 23 grams of carbs per serving. The true test though, was my non keto eater husband loving it as much as I did.

I made this for breakfast this morning. I have to admit I was a little skeptical of the cauliflower, but when you do it right, this stuff is MAGIC! Not to mention incredibly easy to make! This is definitely going into my breakfast rotation. Might even make it again tomorrow! ;)

Canned corn beef was the one thing my husband really missed. He’s declared this better than the real thing (from a can, of course)
I stuck it in the InstantPot for 90 minutes with 4 cups of water and a quick release, and fried it in a pan with frozen riced cauliflower.
He’s in love.

Funny, I’ve always thought the canned corned beef hash tastes like dog food!
I’ve been cooking for a friend with health issues. One of my challenges is to tempt her to eat more, and the key to this has been corned beef. She loves it! And I am learning to love it even more than I used to, perhaps because I am improving at cooking it with all of this practice.
I’m about to go back to my low carb ways (long story), so this is right up my alley. Now i can make regular hash for her, and this version for me. Thank you, thank you, thank you!
