My love of low carb cookies is no secret, and these Keto Chocolate Fudge Haystacks are right up there with the best of them! Primarily because they are no-bake, and therefore ready to eat in as little as five minutes! Also, they are intensely chocolatey, chewy and creamy at the same time, and they fall into the fat bomb category, so you can eat them anytime and not even feel bad about it! #allthewinning ?
This Keto Chocolate Fudge Haystacks recipe was born of my desperate desire for something sweet and chocolatey RIGHT NOW, coupled with my being too lazy and impatient to want to actually bake something – or wait for said something to be ready to eat. Â This pretty much describes my low carb life lately.
If you can relate, then this is your low carb cookie recipe my friends. Â #lazyketochocolateloversunite
The shredded coconut in these Keto Chocolate Fudge Haystacks makes them chewy and cookie-like, and the nuts add a pleasant crunch and earthy flavor. Â If you are allergic to nuts then you can certainly omit them, or if you have a specific nut preference, you can sub in your nut of choice.
If you’re a fan of fruit and nut bars, you can throw in a couple of dried cranberries or cherries (or ewww, raisins) into these keto cookies, but be mindful of the extra carbs if you do.
Mr. Hungry and I have been grabbing one of these no bake keto fudge haystack cookies for breakfast along with our coffee on busy mornings, and I’ve found that it easily keeps me satisfied until lunchtime!  They make a great after dinner treat too – or pretty much whenever you want a blissful few bites of creamy chocolate goodness!
My handy dandy cookie dough scooper is in storage in New Jersey right now, so I just used two spoons to form my keto haystack cookies. Â It’s much easier and faster if you do have a scoop though, so I’ll be bringing one back on my next trip to the States!
These Keto Chocolate Fudge Haystack Cookies are everything you want in a low carb chocolate cookie fix! Â Quick, easy, delicious, creamy ANDÂ crunchy, and they’ve got that sweet /Â salty thing going on if you like that sort of thing! Â Which I do. Â A LOT.
Can’t wait for you to make these and hit me with your feedback in the comments!

Do these freeze well?

I can not wait to try : ) I will make tonight and hope for the best. My husband has been so grumpy now that induction is over. I am trying to keep him happy while we continue this journey. He has a lot more to lose than me and has high blood sugar and a big belly. I also have fat on my belly, my spot : ( But with recipes like these, I am excited to have more interesting things to add to the diet that will make us both happy. Thanks for your recipes. I will let you know how it goes. Cheers : )

Delicious. For those who found them gritty, you may have used a granulated sweetener. Because it’s a no bake recipe, granules won’t dissolve. I only had granular Swerve so I buzzed it into Confectioner’s powdered sugar in the food processor. Not gritty & tasted good. I also put mine in the freezer for 20 mins to help firm them up.

Mellissa, these were fantastic! I’ve made many, many low-carb/keto recipes that claim to taste like the “real” thing and unfortunately most of them fall short. Not these though! I made them exactly as your recipe instructed except I left out the walnuts and added a whole almond on top. Just like an Almond Joy bar.

Um what?! These are AMAZING. Seriously….I think I ate the equivalent of one ball just while I was prepping them. Took all my self-control to get these in the fridge so they can harden up. Thank you! Just what I needed today!
Jessica says
No! Omg i doubled everything but left the erythritol the same because I never used it before. What in the world were you thinking. Gritty, way over the top sweet and your carb count has to be way off. It made 50 . Ill choke the rest down over time as im not going to throw money out but wow. Never again.

Mellissa Sevigny says
I’m guessing you made an error somewhere when doubling the ingredients. These shouldn’t be gritty, or overly sweet. Perhaps it was the brand of erythritol you used?
Leonard Averitt says
its no bake, so using a granular erythritol is going to make it gritty, use the liquird or powder next time. thought that was a no brainer.
Kim says
Great keto snack! Love it!

Hi for those of you who may be considering swapping Truvia in for swerve don’t do it! I thought it might be okay since the main ingredient is Erythritol… no such luck.
Thanks for all the yummy recipes Melissa!
Vickie says
are these supposed to firm up in the refrigerator and get hard I left mine in the refrigerator for hours and they are still pretty soft but they were still good.
Mellissa Sevigny says
Yes they should be firm enough to hold their shape easily once refrigerated – not sure what might have caused yours to become soft?
Apryl says
Thank you for this recipe! A staple at my house, my husband and 2yo love them! I doubled the batch and freeze them every Sunday and they get eaten throughout the week. Our favorite varietion: almond slivers instead of walnuts. Toast the coconut and almonds in the toaster oven, lightest setting (careful they burn easily, especially the coconut). In addition to the vanilla, I add the same amount of almond extract. Like a almond joy but better.

These are soooooo delicious!! I used Splenda sweetener. I am making these for our Bible Study get together tonight to show everyone that Keto treats are awesome!! Thanks for sharing!!
Kala says
And I also used pecans because I had no almonds…
Mollie says
I tried these Tonight. They were bitter so I added a little peanut butter and some extra cream cheese. They are good. But still have an aftertaste. I used stevia sweetener. Should I use a different sweetener?
Mellissa Sevigny says
Stevia mixed with chocolate can have a bitter flavor – definitely recommend a different sweetener, xylitol (toxic to pets) or erythritol.
Sandra Akhtar says
Ahhhh, that just be where I’m goIng wring. This is the second choc/ creamy cheese recipe I’ve tried and I’ve thrown both of them out. Used a super of stevia in both. This is day 7 of keto for me so still learning basics. Thanks for the info.
Kim says
absolutely awesome recipe!!? Use something called swerve. You can get it at Meijer if you have one of those or any health food store. I buy the swerve that’s like powdered sugar. You would never know that it’s artificial sweeteners in it and it’s good for you. They have linked a lot of positive health benefits to swerve. going any health food store or online and you will find it instantly. they sell a granule and a powder swerve. also for you pet lovers, it safe to be around your pets BUT unsweetened cocoa is NOT safe around PETS. IT’S TOXIC TO PETS! Good luck!!!

I used Splenda and mine wasn’t bitter…maybe try that ?
Liz Harrison says
Swerve is the best sugar substitute I have found. Stevia had a bad aftertaste to me and made my stomach upset.
Susan says
can’t wait to try these. I plan to sub chopped almonds for the walnuts so it will taste more like an Almond Joy bar. also can I sub Pyure for the erythritol?
Jennifer says
These were so amazing! My daughter and husband even thoroughly enjoyed them, and my husband claims he doesn’t like coconut (shhhh….). I can’t tolerate dairy, so I changed them up, but they still turned out beautifully, although I have no idea how they’d compare to the original recipe. I did:
1/2 cup + 4oz (to take the place of the cream cheese) coconut oil
1/2 cup erythritol sweetener + a dash of unbuttered powdered stevia
3T milk (I used almond)
1/3 cup premium unsweetened cocoa powder *
1/8th tsp kosher or coarse sea salt
1 cup unsweetened shredded (or desiccated) coconut
1/3 cup chopped walnuts
1 tsp sugar free vanilla extract
I heated up the milk first and dissolved the “sugar” and salt in it to avoid the graininess. Then I actually melted the coconut oil in it, removed from heat, and followed the rest of the steps but let the entire saucepan cool down in the fridge for about 15 minutes before dropping onto my silco mat so the chocolate wouldn’t be runny. OMG! SO AMAZING!!!!

I can’t make the recipe builder re-create 1.2 net carbs per serving that you have listed. I got 13 haystacks and with that I get over 7 net carbs a piece. The swerve is 4 carbs per teaspoon, I used 1/2 cup so 24 tsp=7 carbs per serving just by itself. The shredded coconut I have says it is 4 carbs/4 fiber per 2 T so I am going to say it cancelled itself out. The walnuts are 6 carbs/4 fiber for around 1/3 cup. 12c/8fi in the cocoa powder. =.46 net carbs per haystack. Add that to the 7 from Swerve and you have at least 7.46 net carbs. What am I missing here?
Mellissa Sevigny says
Swerve carbs are from erythritol which has zero impact on blood sugar and aren’t counted in the net carbs.
Lorna says
Oooh, I see. My husband and I are diabetics and our blood sugar went crazy after eating these so I thought I had made some kind of mistake with the recipe. I guess we just need to count the carbs from the swerve since we are more sensitive. Thanks for the yummy recipes!
Faye says
First time making a fat bomb, and first time using Swerve. They taste good, but are very sweet. I will reduce the amount of Swerve next time. I can’t for the life of me figure out how you get 1.5 net carbs. A cup of unsweetened coconut has 32 g of carb, and 1/2 cup of cream cheese has 8 g. I made 19 balls, and I am calculating 2.1 net carbs per ball. 16 balls would equal 2.5 g. What am I missing?
★★★★
Christine says
I know this is an old post, but perhaps it will help someone else. Unsweetened coconut should have around 2g net carbs per ounce. If the one you are using has 32g net carbs for a cup, it’s definitely sweetened.
★★★★★
Kag says
Could you substitute oatmeal for the coconut
Mellissa Sevigny says
I suppose you could, but it wouldn’t be Keto anymore if that’s a concern for you.
Rose says
Thanks for this great recipe! Substituted a combo of coconut butter & coconut oil for butter and used confectioners Swerve & chocolate stevia to sweeten. Awesome low carb fudge treat. Cannot wait to try your other recipes!
Scott says
Made these last night and I am so glad I did! They are fantastic. I also substituted pecans for the walnuts as I like pecans much more and where I live in Mississippi, pecans are everywhere. I did notice the grittiness too(I used Truvia) but it did not bother me in the least. Thank you for this recipe :)

LOVE the mixture of chocolate and coconut. I used granular swerve and they were definitely gritty. I couldn’t find confectioner’s swerve at my local store. It’s alright, they came out fine and tasted amazing! Hard to stop at just one….
